Delicato Adds To Import Stable, Taking On Schmitt Söhne
California’s Delicato Family Vineyards is expanding its imported wine portfolio, adding Germany’s Schmitt Söhne to its range effective in January. Schmitt Söhne, which previously handled its own U.S. importing, is known for Riesling and includes its namesake flagship brand, as well as Relax Wines, Fünf Wines, and the Thomas Schmitt Private Collection. Delicato will also import luxury estate wines Bischöfliche Weinguter Trier, Schloss Vollrads, Friedrich-Wilhelm-Gymnasium, and Franz Keller, which are distributed but not owned by Schmitt Söhne. Overall, the Schmitt Söhne range totals about 700,000 cases in the U.S. Delicato’s import lineup also includes Chile’s Santa Rita, which joined the portfolio in April.

Cooper & Thief Cellarmasters, part of the Constellation portfolio, has launched a new Cooper & Thief Cabernet Sauvignon ($60) that has aged six months in rye whiskey barrels from Constellation’s High West Distillery in Utah. Why isn’t wine bottled in recycled glass?
While some wine bottles are indeed made from recycled glass, it’s true that many are not, and the production of a new glass bottle is responsible for a large part of a bottle of wine’s carbon footprint. The good news is that glass is recyclable, and in the Netherlands, more than 90 percent of glass containers end up being recycled. That’s far more than here in the U.S., where various agencies report that only about a quarter to a third of our glass containers are recycled. America needs to do a better job of going Dutch!
One of the reasons that wine bottles in particular are sometimes not recycled is because they’re often dyed green or brown, and they need to be sorted by color, if not by the consumer then by the recycling facility. Additionally, glass is heavy, and that makes transporting it to sometimes-far-away recycling facilities expensive if not cost-prohibitive.
After being collected, glass bottles are crushed and ground into what’s called “cullet,” and this ground glass is sold back to glass manufacturers to be melted into new products, including new bottles. “New” glass can contain as much as 70 percent cullet.
For more insight, I spoke to Sarah Bar, project manager at Gallo Glass Company (founded in 1958 by vintners Ernest and Julio Gallo). Gallo Glass is the largest consumer of recycled glass in California, purchasing more than 30 percent of all the glass recycled in the state, and Bar says that on average, the bottles for E.&J. Gallo’s wines are made from about 50 percent recycled glass. “Any time I can talk about recycling, I’m a happy camper,” she said.
She explained that glass manufacturers actually prefer to use recycled glass. Cullet not only requires less energy to melt, but melting it also generates fewer emissions. “Once you melt that recycled bottle for the first time, we no longer release the emissions from raw materials,” Bar explained. “So the more we use recycled bottles, the better the impact on the environment.”

South Burlington, Vermont’s Magic Hat Brewing Company is releasing a limited edition holiday raspberry stout, Feast of Fools. Previously only available at the brewery, this year 6,000 22-ounce bottles of the brew will be sold at select retailers nationwide. Next Game Of Thrones Beer Revealed
Cooperstown, New York-based Brewery Ommegang has revealed the fifth beer in its series inspired by the HBO series Game of Thrones. Three-Eyed Raven Dark Saison Ale is a 7.5%-abv brew made with malted rye, midnight wheat and dark candi sugar, as well as Hallertau Spalt Select, Tettnang and Bravo hops. It will be available on draft in sixth-barrel kegs and in corked 25.4-ounce bottles ($9.50) beginning next spring, concurrent with the start of Game of Thrones’ fifth season. Previous offerings in the line have included current release Valar Morghulis Dubbel Ale, Fire and Blood Red Ale, Take the Black Stout and Iron Throne Blonde Ale. The first three beers all sold out, and Valar Morghulis is expected to do the same, despite a quadrupling of production compared with the first offering, Iron Throne.

Wine Spectator: Who Buys Wine Online?
Online wine sales have been increasing in the United States at double-digit rates for the past five years. But that doesn’t mean they’re a major part of the industry yet. More than 80% of wine is sold in grocery stores, wine shops and other brick-and-mortar outlets, according to Nielsen. “Wine remains under-penetrated online at less than 2% of all U.S. wines sales,” said Michael Osborne, founder and vice president for merchandising at Wine.com. A new study by researchers at California Polytechnic University in San Luis Obispo sheds some light on the small but growing community of online wine consumers.
Based on a survey of consumers, researchers discovered that online wine buyers are more likely to be male, over the age of 40, married with children and have a higher household income. They also tend to be wine connoisseurs or enthusiasts and spend more on wine than non-online buyers. (An e-mail survey was sent to 3,000 wine purchasers with a 31% response rate; 23% of respondents had purchased wine online.)
When these consumers buy wine online they are generally seeking higher quality wines from recognized appellations and have a preference for family-owned or small wineries. They are also quite tech savvy and are more likely to use phone apps or tablets to research wine information. But these online wine consumers do not use Facebook, Twitter or blogs any more than non-online wine consumers. Surprisingly, Millennial consumers of legal drinking age currently purchase very little wine online, even though they grew up with the Internet. The researchers discovered the main reasons were that Millennials think shipping costs are too high and would prefer not to wait for a wine shipment.
Though online wine sales currently constitute a small percentage of industry volume, most experts agree that the channel will continue to grow, especially with Amazon entering the arena in 2012 and large wine retailers such as Total Wine and BevMo expanding their web presence. Wine Spectator has more on the Cal-Poly study and the outlook for online wine sales in the U.S. market.

Diageo has officially unveiled a new flavored extension to its Crown Royal Canadian whisky brand, Regal Apple. The new offering is a blend of Crown Royal whiskies infused with natural apple flavors from Regal Gala apples and retails at $24.99 a 750-ml. The 70-proof product is launching nationwide, backed by a full marketing mix including television, print and online advertising, with a Regal Apple commercial set to air nationally on TV and social media beginning November 17. Regal Apple joins 2012 entry Maple Finished in the Crown Royal flavor portfolio. The top Canadian whisky both in the U.S. and globally, Crown Royal’s U.S. depletions advanced 0.5% to 4.25 million cases last year, according to Impact Databank.

Anchor Christmas Spirit
San Francisco’s Anchor Distilling Co. has partnered with sister company Anchor Brewing to release Christmas Spirit, a new holiday entry. Featuring winter spice notes, Christmas Spirit is distilled using Anchor Brewing’s Christmas Ale, an annual beer release typically available from November through mid-January. The 45%-abv clear spirit will be sold throughout the holiday season, priced at $49.99 a 750-ml. Christmas Spirit marks the latest “beer-meets-spirit” collaboration from Anchor Distilling and Anchor Brewing, following their December 2012 launch of Hophead vodka ($29.95), made with hops from Washington state’s Yakima Valley.

Canadian Club has released an all-rye grain whisky called Canadian Club Chairman’s Select 100% Rye, according to Whisky Advocate. The whisky is aged for seven years at Alberta Distillers, Beam Suntory’s western Canada distillery at Calgary, and then shipped to Walkerville, Ontario, for bottling at 40% abv. The product is priced about $1.50 higher than Canadian Club Premium at retail. Diageo’s Baileys liqueur has extended its lineup with the launch of Baileys Chocolate Cherry Irish Cream. Featuring a blend of chocolate and cherry flavors, the female-focused entry is targeted primarily toward the shot occasion. Q: Can a dry red wine have higher sugar content than a sweet wine? Does the amount of residual sugar indicate the alcohol content of a wine?—Pat B., Huntington Beach, Calif.
A: Let’s start by noting that the fermentation process converts the sugar in the grapes to alcohol. It’s not unusual for at least a little bit of sugar to be left at the end of fermentation. Technically a wine is considered “dry” if there are less than 10 grams per liter left, while a “sweet” or dessert wine has more than 30 grams per liter. Stuff in between is considered “off-dry.”
Of course, most people don’t sip a wine and think, “Boy, this tastes like it has 13 or 14 grams per liter of residual sugar!” Our perception of the sugar is based on our own sensitivity to sweetness (some of us like cotton candy more than others) as well as on the interplay of the other factors in a wine: alcohol, acidity, tannins and glycerin. Two wines might have the same exact amount of residual sugar and alcohol, but one’s fruit flavors could taste more jammy and ripe (and therefore sweet) than the other’s.
Since we’ve noted that fermentation converts grape sugars to alcohol, there’s definitely a relationship between a wine’s residual or unconverted sugar and its alcohol level. The more residual sugar, the lower the potential alcohol that wine could have. But it’s not a simple relationship—there are other factors at play, particularly how much sugar the grapes had to begin with. Two wines could have widely different alcohol percentages but the same amount of residual sugar—or vice versa—depending on how ripe the grapes were.—MaryAnn Worobiec

Ommegang and HBO® announce the newest beer in the Game of Thrones® collaboration series. Through its first four seasons, the critically acclaimed drama has become the biggest show on HBO.
In the world of Westeros, Valar Morghulis means “all men must die.” Fans of the hit HBO show chose the foreboding phrase as the name of the newest beer in the Game of Thrones® collaboration between HBO and Brewery Ommegang. As part of a Facebook poll, fan voting determined the style and name of the next beer. An Abbey Dubbel was selected and it is perfectly represented by the “two- headed” coin given to Arya Stark by Jaqen H’ghar, one of the “Faceless Men of Braavos” – legendary assassins with the ability to change their appearances at will.
TASTING NOTES
Valar Morghulis possesses a deep chestnut brown color with a persistent and creamy tan head. Rich aromas of caramel, toffee, ripe fruits and burnt sugar, with a hint of cloves. The taste is delicately balanced with rich malty sweetness, caramel and just enough bitterness to balance out its malty backbone. A surprisingly dry finish is light on the tongue, which belies the initial aroma.

Hops: Apollo, Hallertau Spalt
Spices: None
ABV: 8.0%
Pair with savory dishes, roasted lamb or beef, marinated roasts and grilled venison. Strong cheeses such as Stilton, Gorgonzola and smoked cheddar will match well against the malty body.
