Many faces of Chardonnay
Chardonnay Types As Explained By Great Northwest Wine Blob:
Here are some basics:
Barrel fermentation: The grapes were crushed and the juice was put into oak barrels (or tanks with pieces of oak inserted) then fermented. Depending on how much new oak was used determines how oaky the wine is. It is safe to say that if a Chardonnay is fermented in oak, it will be oakier and richer.
Malolactic (ML) fermentation: The wine goes through a secondary fermentation that converts tart malic acids to softer, more elegant lactic acids. Nearly all red wines are put through ML.
Sur lie aging: The lees – leftover yeast and other sediment – is left in the barrel with the aging wine. Often, the barrel is stirred, which mixes up the lees. This tends to create a richer mouth feel to the wine.
Stainless steel: This means the wine was fermented and aged in stainless steel and no oak was used. It is quite possible that part or all of the wine still went through ML and lees aging occurred.
These days, winemakers are experimenting with any and all of these techniques. Indeed, you can enjoy a Chardonnay that is partially barrel fermented (new and used oak), partially put through ML and partially lees aged.
If the wine you’re looking at has a back label, look for words such as “rich” or “bright” to determine which direction the winemaker took.
